Kitchen Couture: Vena Cava's Beef Jerky


Latest edition of Kitchen Couture for Bon Appetit is up! This one features Vena Cava's recipe for homemade beef jerky, which took about three days, including a seven-hour baking time (basically, I was up 'til 2 am last night poking at drying beef in my oven. However! The end result is totally worth it. The chemical-laden commercial kind you buy in gas stations doesn't even begin to hold a candle to this homegrown variety.   1. Yum! Fresh jerky is so good. I live in So. Cal and like to take a few trips a year to Mammoth. The drive up usually includes stopping for some fresh jerky either at Mahogany Country Smokehouse in Bishop or Gus's Really Good Jerky in the middle of nowhere on the 395. Both are expensive but tasty and offer a variety of flavors and meat types. I've never even considered being able to make my own jerky. The time commitment looks a little intimidating but I might have to try it.

  3. Yum! Next time, I would sprinkle some hypocrite on top before drying.

    "And then, something just changed. The bottom line was this: Eating meat, poultry, even fish, is bad for you, bad for the earth, and unthinkably cruel to the animal you're eating.   6. A little pocket that is recorded as three or four servings can hamper you around seven dollars or more. Just excessively costly for a motivation buy nibble with one significant fixing!
